If you eat it hot, just drain and eat quickly. If the pasta is intended as a base for a salad, rinse with cold water to stop it from continuing to cook. The firm texture of the pasta makes it possible to preserve the starch content without degrading it. This means the slow sugars are preserved, digestion takes place more slowly and contributes to the prolongation of the effect of fullness. Eating "al dente" pasta is no longer taboo!
